Proyecto Cu4tro


No, that's not a typo. It's a Spanish wine that (i think) they have at Riddles. I picked up a bottle at my local Schnucks, just under $10. The label claims: 40% Cabernet, 26% Merlot, 26% Tempranillo, and 8% Grenache. No matter -- it's delicious! Especially with ginger cookies! The cookies were my first effort and are a little overdone, though after a week they've softened to a delightful chewiness.

Oooh, that looks yummy. And the price is right. And the ginger cookies look delicious. Mostly ginger, or a great deal of molasses?

The recipe... Personally, i think they could be a bit more spicy. I might increase the spice quantities by 1.5 next time and maybe double the ginger. But i have a certain madness when it comes to ginger whatnot...

Also, i chose to make tablespoon-sized cookies instead of giant ones.

Finally, hopefully it's easy to find this one. I think it's worth the bother.
